CHOCOLATE CHIP NICE CREAM

One of the hardest parts about staying on track with healthy eating are the sweet cravings! I have such a hard time giving up the ice cream, chocolate, cupcakes etc. If I’m not careful when the sugar cravings strike, it can be very detrimental. I’m talking a chocolate wasted type scenario! If I order the tub of Ben and Jerry’s, I will most likely eat every bite and regret it immediately after.

My journey has taught me that my self control is limited and if a bad food choice is there, I will mentally switch off my portion control mind and tell myself, “Oh well, guess I’m off track again!” This mentality causes an emotional roller coaster. The solution I’ve found that works best is making my own desserts that are healthier versions to satisfy my cravings occasionally and keep me feeling good about my choices! Long behold, my favorite ice cream replacement….NICE cream. Here’s my simple nice cream recipe.

***PORTION CONTROL***I recommend sticking to 2 frozen bananas MAX. Remember bananas still contain a lot of sugar so two bananas is more than enough to satisfy those cravings!

Another reason to feel good about your switch from ice cream to nice cream? Bananas are loaded with fiber! This will help you stay feeling full longer. Bananas are also loaded with LOTS of great nutrients. The higher content of potassium also makes bananas a great way to get back those electrolytes lost during your workout!

  • 2 frozen bananas
  • 1/2 tsp vanilla extract
  • 1 tbsp coconut milk
  • 1 tbsp cacao nibs

  • 2 frozen bananas

Instructions
  1. Put the bowl you're going to serve your nice cream in the freezer. This will help prevent melting while you savor this dish!
  2. Put frozen bananas in the food processor
  3. Start blending!
  4. Add in vanilla extract
  5. Through the top shoot, drizzle in coconut milk. A little bit goes a long way! DO NOT add too much. Start with a little drizzle, add more if needed. You want an ice cream texture and that will happen on it's own by blending. Use your judgement, add a little at a time as needed.
  6. Add cacoa nibs
  7. Once well combined with ice cream like texture, serve into your bowl from the freezer.
  8. Add Toppings. Get Creative! I used toasted coconut, a homemade chopped peanut butter cup, and some shaved dark chocolate. Enjoy!
